The OH is making the dinner and I am going to have my 1st attempt at a Souffle. I have a recipe but I hear these things can easily go wrong.
Any tips ?

I have the choice of two ovens. My fan assisted electric one or the combi oven on my microwave. Obviously the microwave one spins.0 -
Oooh that sounds divine (choc cravings are nearly overcoming me here as I've given it up for Lent! :A )
I think I would go for your fan oven (my combi is a bit underpowered) as you have to know it's cooked first time, no popping it back in for a few minutes more with souffles.
Other than making sure your beaters are spotless when whisking the egg whites and folding them in very lightly, I'm not sure there's much I can suggest. Just make sure you're ready to eat them the moment they come out of the oven cos they'll sink quickly.

The souffle came out perfect. I am well pleased. As there are only two of us I had to eat two portions and the OH managed 1 1/2.
Will definitely make it again.0
