Single cream question

Hi

I have some single cream in the fridge which has Use by 13th feb.

I was hoping to make Black Saturn's chocolate mousse, on the 13th to eat on the 14th, do you think it would be ok for this, or will it go off overnight when the mousse(s) are setting in the fridge or something?

I normally use dairy products beyond use-by dates if they smell ok, particularly if they're unopened.

You might be able to freeze it now and defrost to make the mousse (but it might go a bit grainy and not do what it's supposed to do when you use it in the mousse, I'm not sure
