Will sweet and sour mixed veg freeze?

Sorry if this should have gone elsewhere - feel free to move me :)

I make a mean sweet and sour mixed veg, but i always end up throwing half a can of pineapple away cause I only use that much and I don't really like tinned pineapple on its own. Do you think it would freeze? I'm not sure if it would and don't want to waste even more food by trying :D

Also, if anyone would like the recipe, please shout :D it's one i got from a book years ago and have adapted. Veggie and vegan (I believe) and lovely :)

  • Worth a try - I always cook double of everything and freeze some and it's never been a disaster.

    I always try to make a pizza and sweet and sour at the same time to use the pineapple - admittedly I am not always that organised, but when I am I do a veggie pizza (with peppers, pineapple, mushrooms, sometimes veggie sausage sliced, sometimes sweetcorn, ALWAYS onion and whatever else I have that suits - once I made a yellow courgette pizza it was AMAZING to look at, I could hardly bear to eat it!) and store one of them in the fridge for the next day.

    I think it's because it's got such a wide range of ingredients in it, vinegar and pineapple juice and sugar, i get nervous - I often do double portions of other things i make to freeze :)

    I feeze leftover pineapple on it's own in a zip-loc bag. It can come out a little bit softer but still useable. Saying that we don't have leftover pineapple very often......I like it too much:D
