pork, butter beans and cherry tomatoes

I'd like to do a nice hearty stew or something and incorporate the above. Any ideas? Nice and spicy please!

    I take it the pork is or can be diced?

    If so, I'd fry the pork with some onions and garlic. chuck in some fresh thyme if you have it. Add some peppers and the butterbeans with some white wine and simmer. Put in a pork stock cube if you have one, tomato puree and add the cherry toms at the last moment. (you could roast these separately first to give them more flavour)

    Continue to simmer on the hob or pop in the oven until pork is tender. you could mess around with this and add carrots or potatoes too.

    I've just made this up by the way so let me know if you try it and it works. :D;)
  • my dinner last night was diced pork, diced waxy potatoes, onions, mushrooms, hot smoked paprika, mixed herbs and a tin of tomatoes all simmered together for about 30 minutes and then thickened with a little cornflour at the last minute.

    you could substitute the potatoes for the beans, and then tinned toms for the cherry toms.

    Smoked paprika is what I would have suggested.... only got here too late!

    Right. I've now got onion and garlic, diced leg of pork, chorizo, butterbeans, cherry tomatoes and cider. Wow! Rice??

    That sounds delicious - personally I don't 'do' anything smoked so would have to use ordinary paprika and leave out the chorizo - but your last bit sounds fabulous and rice, pasta or mash would all be great to serve with it :j .

    I would do it slightly differently: I'd leave the beans out of the pork dish, and then mash them to serve instead of rice or potatoes.

    Thanks everyone. I fried off onions, garlic yellow pepper, added chorizo and diced pork then cider and thyme and cooked for about 1 hour. Then added mushrooms and butterbeans and made a side dish of roasted cherry tomatoes in garlic and herbs and it was superb!
