Will this soup work?

I've searched through the recipe index and discovered I don't have enough ingredients for any of the soups that use lamb stock!

I just boiled up some lamb bones from dinner yesterday (I had a huge lump of lamb, basically double chops but all in one piece, so I roasted it whole then cut the meat off) with onions, carrots and a couple of wrinkly parsnips and the stock looks good.

All I have left for soup are onions, carrots, potatoes (a few new and lots of old) plus a packet of red lentils in the cupboard, would this combination work? Or should I just freeze the stock and keep it for when I have more veg?

  • I think that would be OK. Lovely on a cold day like today!

Have you any garlic, or herbs you can chuck in too? Oregano or mint would be nice with the lamb flavour.

I think as long as you have a good home made stock base any sort of soup works. What you have sounds good to me.

I've cut up about 10 new potatoes, 5 smallish carrots and two small onions and put them all in the stock with some minced garlic, dried mint and salt/pepper, I might not add lentils depending on how the soup looks in half an hour.

2girls, I always compare my cooking to my Nana's, and it always falls short

This is my first time using lamb stock, I hope it won't taste fatty (I did skim off all the fat from the stock).

LOL! You'd be welcome, I'm also not keen on chilli but fortunately neither are the rest of my brood :D

Are you anywhere near Warrington? My home town, but I've lived in beautiful Herefordshire for 20 years :D
