Easy oven bake recipes?

Hello lovely OS ladies :wave:, I'm on the hunt for some baking recipes which involve as little effort as possible especially recipes which are dairy, egg & yeast free or can be converted and recipes that don't need kneading.

So, if you've any good recipes for bread, drop scones etc I'd be really grateful if you could share them with me :beer:

    Hiya, this is really by way of a bump. As you are after specialist recipies have a look on D&DDs thread - it is fantastic and although she has a bread maker a lot of her recipies can be done in the oven. I'm not sure about the yeast free element but she does do some dairy free I think. Otherwise check out the menu threads...

    140g GF flour
    1/2 tblspn caster sugar
    2 tspns GF baking powder
    1/4 tspn salt
    1/2 tspn bicarb
    1/2 tsp ground cinnamon *as there are so many allergies on your list check this is ok to use first*;)
    235 ml soy/rice milk or tolerated sub
    1 tblspn applesayce or pearsauce (just whizz up a tin if you have none)
    2 tblspns safflower oil

    In a lge mixing bowl sift together flour,sugar,b.powder,salt,bicarb,and cinammon.
    In a seperate bowl whisk together milk,applesauce and oil.
    Add wet to dry and stir til just mixed.
    *Add a little milk if its too thick*
    Cook as for 'normal' pancakes :D

    hi, we made these muffins last week,they originally had a blob of cream cheese topping on them and chocolate chips,but the chocolate muffin base was fab really moist! and kept well.

    I then realised that it was dairy/egg free! We made them in ordinary fairy cake cases,but you could make deep muffin ones.

    560ml cold water
    180ml vegetable oil
    1 tablespoon vanilla essence
    5 teaspoons balsamic vinegar (to react with bicarb to make em rise)

    put all these together in big jug,don't mix

    495g plain flour
    65g cocoa powder
    2 teaspoons bicarb of soda
    450g sugar-we used demerra
    1 teaspoon salt -up to you -mean't to help flavour

    Mix all the dry ingredients in a large bowl, add the wet ingredients and whisk till smooth,it will be a runny batter.
    Three quarter fill your cases and bake at 180/ gas 4 ish? till cooked 15-25mins.

    Don't see why you could'nt add some chopped nuts, carob chips on top if you liked or top with icing,personally i liked i them plain.
    these will make 3-4 dozen but dissapeared very quickly!

    I made the pancakes for brunch (first time I've actually made pancakes on pancake day lol). I used half rice flour and half rye flour (I'm not gluten intolerant but trying to be wheat free atm as part of an elimination diet). Didn't have any baking soda so used some egg replacer and had to leave the cinnamon out because himself doesn't like it.

    They turned out ok, not as tasty as wheat (it's hard to replace that lovely natural sweetness wheat has) but once they were smeared with sugar free blackcurrant jam, alpro pouring cream and agave syrup they were delicious :D

    Last night I managed to bake some muffins which turned out better than expected too. I roughly worked off this recipe which I adapted to suit my needs.

    10 oz flour
    4 oz sugar
    2 tsp baking soda
    8 floz soya milk
    2 floz veg oil (I used light olive oil)
    2/4 tsp cinnamon
    3 tble sp of chicory dissolved in a little water
    2 tsp of egg replacer mixed in 2 tble spoons of water

    Mix dry ingredients in baking bowl. Whisk oil, soy milk and chicory and add to well in middle of baking bowl mixture along with egg replacer. Quickly stir in, pop into muffin cases or oiled muffin tin. Pop into pre-heated oven @ 200 for 20 - 30 mins.

    It worked well as I'm trying to find different way of bringing more flavor to wheat free flour without adding to the calories/sugar too much. I'm normally sugar free but going to relax on that for the meantime. I'm actually too embarrassed to list all the foods I'm not able/meant to eat atm :o lol
