Can anyone tell me how to print this in a way that it WILL scan at the checkouts?

I've tried these before, and they wouldn't scan and the checkout operator wouldn't put them through manually...?

It might be the paper you're printing on, or your printer. Sometimes the ink from an inkjet printer bleeds causing the lines of the barcode to merge. I usually print mine on a laser printer and the barcodes come out sharp.

Would photo paper be any good?

Photo paper might be ok, you could try to print at a higher DPI (change in printer settings) to see if that makes a difference.

Yes. I have used this one, Feb coupon. It scans fine in the SS tills.
Although our local tesco has put a note to check with SA before putting a coupon blocking the slot.
The SA checked it and says it's fine. Put it through herself.

Only bought 2 papers, and 2 on friday. That's enough for me.
