I've got a fresh corriander plant. I've chopped up the leaves i wanted today and i know i won't need anymore corriander for a while. Any suggestions of how to save the other leaves? Can i freeze them in some way (after being chopped up)?

As i live alone, i do freeze the chopped coriander after washing it thoroughly. never had a problem yet, although i do use a fair bit. Lasts me two weeks tops.
Regarding curries, how about other typical spices e.g. cloves, cardamoms, cinammon, black pepper. I just dry roast them for a minute on medium temperature to release the aroma and coarsley grind them and put it in just after sauteing the onions.
Forgot to mention garam masala.

Yes, you can freeze coriander leaves (or any other herbs really). You can chop and freeze them, or leave them whole. I have successfully frozen most herbs that you buy in bags from Tesco's just by leaving them in the bag they came in, bunging in the freezer, then taking the bag out, chopping off what I want and bunging the bag back in again. Bird's Eye do frozen herbs (including coriander) which are ready-chopped in little boxes, and you use those straight from the freezer too, so you must be able to do a do-it-yourself version. I'd be inclined to freeze it as flat as possible in a zip-lock bag. Once it's frozen, it doesn't matter if it clumps together, as it will crumble apart easily. Obviously, you're not going to be able to use the chopped leaves as a garnish, but you can stir them into your recipe straight from the freezer and they will taste fine.
As to your second question, it depends what you mean by spice it up... do you mean flavour or heat?!0 -
i use the icecube tray and cut up my herbs pop them in, add water and freeze them, once frozen shake them out in to seperate bags. when using, just chuck them into the pot and they melt.
do the same with any dregs of wine!!
spice it up, use chilli powder or curry powder....herbs and spices limited at the moment
