  • My African friend used to slowly shallow fry plantain, sweet potato and cinnamon, in olive oil.

    Boil plantain and sweet potato (the white one, not the bright orange one) in coconut milk and serve it with fried fish, lovley!

  • I used to eat the sweeter riper ones like this:
    sliced, bake in oven for a bit then add slices of cheese and bake further until cheese is nicely melted.

    Very nice sweet fruit/salty cheese thing going on!

  • My lodger cooks plantain sliced into rings, on baking parchment & then once cooked she eats it on peanut butter on toast.

    We lived for a bit in Puerto Rico when I was a child, and we used to have them all the time. My mother peeled them, then sliced them and fried them in olive oil and put a little salt on them. Yum! Haven't had that in years! I'll have to pick some up soon and have DH try them.

    For mashed ones we just mashed them as they were, maybe adding a bit of cooking water if they were dry. But we didnt have fresh milk at the time (living kind of 'back to basics' in a little village) so maybe that would be something to try.

    people keep mentioning peanuts. in what form? just plain peanuts, roasted/salted, peanut butter, satay type sauce...?

    It is best eaten with roasted & salted peanut, not that I have tried eating it with any other type.
