cheap nice cheese and what to do with it?

while i was shopping tonight i bought 2 very large reduced bits of cheese,
Aran medium with marmalade & glengoyne whiskey :eek:
cheddar with apple and sage & onion

they are big bits, and apart from having them on crackers i don't know what to do with them???

any ideas very welcome

If I am lucky enough to get bargain chees, I grate it then freeze it, so that I can use it later for something or other
