  • You have everything for a Bolognese sauce. The breadcrumbs, eggs and carrot are surplus to requirements.

    If you have any dried apricots, soak them in fruit juice or water to plump them up, chop finely, then use the mince to make meatballs. Make a sweetish sauce from whatever you have at hand - the syrup from tinned fruit, fruit juice, thickened a bit, and serve with rice.

    Meatballs in tomato sauce. Pork and beef is great mixed together for this.

  • I would do meatballs, my kids love them.

    Just mix minced meat with some finely chopped softened onions & garlic, some black pepper & herbs, shape into balls and bake in the oven.

    You can add breadcrumbs to stretch it a bit further, but I don't think it is necessary and prefer mine without.

    I serve them with a tomato sauce and pasta for the children, & put a bit more kick in the sauce with more garlic & chilli powder for me & hubby - then suddenly they are "ablondigas", a Spanish tapas dish!

    [Once you have cooked the meatballs, they can be frozen again, defrosted & reheated.]
