Freezing a fruit loaf?

I thought I'd make a fruit loaf so I could put a slice in my dd's lunchbox so it's in the oven now.

My question is...... will it freeze ok? If I slice it first what's the best way of storing it so the bits don't stick together as I'd rather not put each separate piece in a freezer bag.

I'm not sure if what it is made from is relevant but it's tea, mixed dried fruit, brown sugar, mixed spice, an egg, plain flour and bicarb.

  • I have made a couple of different fruit / raison breads, and all freeze brilliantly.

    I simply slice, pop it all in a plastic bag - you will find that you can retrieve one slice at a time without much effort. If you are concerned (maybe yours is stickier than what I have made before), perhaps open freeze the slices for an hour or two before putting all the slices in a bag, this will have the effect of freezing the cut edges to stop them sticking.

    I freeze a range of different fruit loaves, weetabix cakes and banana cakes etc. I cut them down to smaller 2-3 day amounts (1/2 or 1/3rd of a loaf tin size), wrap them in foil and then freeze. I take one out and use over the next couple of days and than take another one out.

    Because I've got several different ones in the freezer I can ring the changes a bit. Fruit loaf this time, then banana loaf the next etc. etc.

  • Thanks for those suggestions - open freeze sounds to way to go.

    apple_mint - that's what I plan to do, put a couple of different cakes in the freezer so littlies can have something different each time. If I leave a whole cake out I eat it! :D

    I've also sliced the cake and then frozen them in icecream tubs. The slices didn't stick together.

    thanks for this. i bake for the freezer, but have never thought of freezing cake pre sliced. i guess i've got no more excused for eating the whole cake anymore!!
