Picked up some coley loin yesterday as it was on the condemned shelf! Has anyone got any recipes I can use it for? I never cook fish so am short of ideas but thought I could ask on here:D. Hoping someone can help - thanks.

I've used coley before, just bunged in a pan and covered with water or milk (or half n half) maybe sprinkle some dill over it and garlic salt or granules
You could add a splash of white wine if you want to be fancy!!
I serve mine with carrots slow cooked in butter and rice with a spoon of butter and garlic salt stirred into it!

Coley has an image of inferiority from the distant past, when it tended to get used, along with whiting, as food to feed your cat. It's a pefectly good tasty (off) white fish and can be used in the same way as cod, haddock etc etc. Not to happy about the 'reduced' counter bit, as the fresher the fish the better it is, and the older it gets the less flavour and taste. In view of it's history I'd probably cook it in a 'provencale' type sauce adding the fish at the end - it will only take 4 or 5 minutes to cook. Soften some onion; garlic, red pepper if you like, and add chopped tomatoes (herbs, other seasonings to taste) simmer for a while until sauce is of the right consistency then add the coley. If you lightly fry the fish first to seal it, it will retain it's shape better, or you may prefer it to be blended in with the sauce anyway. Other suggestions would be curry, and fish pie (although I probably wouldn't use 'vintage' fish for this!)0
