Making my won wedding cake

I probably wouldn't make them much more than a month in advance - much longer than that and you might get freezer burn or other flavours sneaking in. If you've got time, I'd have a go and leave one in for a fortnight and one in for a month, then taste them and see if there are any major differences. Sometimes choc cakes can go a bit more moist when you defrost them, but it's not always a problem ... it's worth trying a recipe out to see how it freezes.0

Thankyou , i think i will scour around for recipes , I want a really chocolaty choc cake as i intend to serve it as desert lol! I think i will bake the first at easter, as i have alot of family round and they can be the cake testers. And then freeze some portions and see how they defrost a month later.0
