EEK, just about to do late dinner

Just about to start cooking a late dinner, brought a nice piece of orgnic beef from tesco and was gonna put in oven for the hour it says but i cant rememebr if im supposed to cover it for the first 30min or something, and how long do i need to let it stand before carving,

I would cover it and take the cover off 20 minutes before the end. Rub it in oil and put salt and pepper on it prior to cooking.

Hi wendy-ann,
I don't usually cover beef when I'm roasting it. I dust cover the joint with black pepper and mustard powder then for the first 20 minutes cook it at 250 degrees then lower the heat to 190 degrees and cook for 20 minutes per pound. If you like it rare/well done, then subtract/add 15 minutes.
I always let it relax for 20 to 30 minutes before carving.
