Have you any lovely Veggie meals for non veggies?

Options
My daughter is a Vegetarian but the rest of us are not and to save me doing two different meals all the time i'd like to make some veggie safe meals instead of us having to have qourn meals all the time. I think i cook diferent meals for us all about 5 times a week, the other 2 days are pasta baked dishes. I just don't want to be cooking all the time, having to do us and then my daughters meal seperate :o I want to try to cut the different meals down to at least 3 days

I make home made burgers, meat ones and meat free. Everything else is the same, salads, pickles, sauces, and served with HM potato wedges.

I make HM Pizza, so can make meat free toppings.

Jacket potatoes can have separate fillings, meat free as necessary. (my family piles on grated cheese, baked beans and coleslaw.... all at once UGH!)

  • Actually I do taste the difference between Quorn chicken bits, but I like them anyway, some times it's nice not to eat meat (and you can cook them from frozen!! great for when I forget to take something out the freezer to defrost)

How about a veggie curry? I just chuck in any veggies I've got kicking about and use curry paste and either tinned tomatoes or passatta for the sauce.

Quorn Mince i find tasteless yuk! and don't even mention Tescos Veggie mince  I agree about the nuggets. The quorn chicken we have with Korma sauce and rice and that is nice, you can't really taste the difference from chicken.

How old is your dd? Is she with you every night to eat?

We have a system that works quite well.

If she is out, we eat meat.
If she is home we either a) eat veggie or b) have a compromise meal (i.e. burgers either veggie or meat. I don't make everything from scratch for compromise meals, I batch cook stuff, so that I'm not cooking 2 meals each time. Burgers I tend to batch make and stash in the freezer. Have similar units of meat bol and vegi bol)

Shes 15 and yes with us everynight, although she has just said after watching me write this thread that she can cook her dinners herself, now i feel guilty :p
  • You don't need to cook separate meals. Decide on what meal you all want that day e.g. spag bol and just use 2 saucepans. You'll use the same ingredients but put veggie mince in one and normal mince in the other. Same meal for all and happy DD. And you can batch cook same time.

I'm veggie (no fish) and my mum eats meat and my dad just fish but I've never had a separate meal made for me. If they having fish/pots/veg then I'll have tofu/pots/veg. even when I lived with my ex-BF who was a massive meat eater we always had the same meal and i would just substitute the meat for a veggie alternative.

I'm not a big fan of Quorn, don't like the texture - probably cos I've been veggie since birth and never tried meat - but I do eat the quorn mince and sausages.

    Good luck

  • I like Red Dragon Pie. It's like shepherd's pie for Vegetarians but you use aduki beans instead of meat. I just use one of the recipes off the internet. There are several variations when you google.

I think I used the recipe from this one last time. I think I added some peppers to it.

I think it is a lovely recipe, my parents aren't vegetarian but they enjoy it.

    Potato, mushroom and leek bake?

Cheese, mushroom, onion & vegetable pie?

    Vegetable pasties with wholemeal pastry?

Mushroom curry with egg fried rice?
