Hi, quick question for you all. Do you know whether you can freeze home made guacamole ?

I've frozen it. It went a little brownish but avocados do discolour easily.It ended up beige rather than pale green. It also separated slightly but when stirred it reconstituted reasonably.
I didn't leave it in the freezer very long but I suppose the last lot must have been in for about 3 months.0 -

I believe the more lemon juice in it the less brown it goes. As well, leave the minimum amount exposed to air as it is the oxygen that oxydises it.
(To keep a cut avocado from turning brown put in flat on a slightly wet piece of kitchen roll).I lost my job as a cricket commentator for saying “I don’t want to bore you with the details”.Milton Jones0 -
For low fat/cheaper guacamole substitue some of the avocado with cooked peas & the sour cream with yoghurt;) Doesn't freeze though 'cos of the yoghurt.Post Natal Depression is the worst part of giving birth:p

a good tip is too add pureed broad beans to the avocados and lemon juice.
The taste is exactly the same but it holds up better and it will strecth that much further0 -
If your guac goes a bit brown, you can add some chopped tomatoes and pretend that was your idea in the first place. Actually, it's pretty good like that with extra chillis.0

I froze guacamole and it stayed green. I put it in a little tub, and then put clingfilkm on top so that there wasn't any air in between the dlingfilm and the guacamole. Worked fine, no separation, no discolouring.0

Not sure about freezing, but I read that if you're storing guac in the fridge you can place the stone in the guac to stop it turning brown.Sealed Pot Challenge 5 - #1742 :j0
