Hi,
Has anybody tried Mary Berry's tip for making lemon sugar with lemon rind in caster sugar? I made some today as I needed the juice of a lemon but not the rind for a recipe. My question is how long should I store it before I use it and how long will it keep?

I've made similar fruit peel sugars before, I find that if you keep them a few days before you use them you get a nice flavour. The sugars made with fresh peel don't last *that* long - keep it in a cool, dark place and sniff it well before you use it, as they can go a bit odd tasting after a couple of months. They can also go a bit lumpy and hard.0
