Anyone tried freezing chorizo?

Hi chaps - am making jambalaya tonight with left over chicken and have got a large piece of chorizo from Lidl. Only need to use about 6 inches of it so have lots left - has anyone successfully frozen chorizo. This is the only recipe I ever seem to use it for!:D

thanks

I always freeze it in recipe-size portions and it's fine. Nigella keeps hers in the freezer too if I remember correctly....

No need to freeze it. It's cured pork sausage which is designed to keep for ages. The whole idea is that it keeps well as it is. Even in really hot parts of spain it will be hung up and cut from as needed. There will be a BB date on the packet, no doubt - but I'd take it with a pinch of salt.

we had a similar kind of sausage from france and it kept for at least 2 months as it is cured so kept nicely in the fridge

Hi maxjessdru, I think the answer is you can freeze if you want to but it would last ages just sat in the fridge.

I've always fancied Jambalaya, what's your recipe?
