Going 'veggie' - Menu / recipe ideas please

Hi, in attempt to:
a) save cash
and
b) get healthier

I'd like to avoid having meat for a few days of the week. I spend a lot on meat because I like quality meat from my local butcher, as opposed to supermarket meat. (I don't like the taste / texture of supermarket meat)

Hubby is not at all interested in having no meat on his plate, so I have to find fantastic meals that will make him forget that he hasn't any meat on his plate. So that's where I thought all of you wonderful people could assist me, and others in my situation.
If you know of a recipe that's veggie and you'd like to share it, I'd love it if you could post it here.

  • Don't forget macaroni cheese is vegetarian. As are baked beans on toast, omelette and pizza (depending on toppings). It might be worth pointing out to your DH that you have probably been eating veggie meals already and he just hasn't noticed :)

    The best veggie recipe book I've ever found is the Cranks Recipe Book - well worth the investment as every recipe in it is lovely. You can get it used for 1p plus postage on amazon.

    Cheese and potato pie with baked beans
    Vegetable moussaka and green beans.
    Courgette, feta and mint cakes with sweet chilli sauce, mixed salad (DS recipe)
    Baked red peppers, stuffed mushroom and salad
    Peppers stuffed with risotto, baked mushrooms, salad
    Peppers with halloumi cheese, potato wedges, grilled courgettes
    Root vegetable stew and dumplings
    Pepper and bean hotpot and broccoli
    Roasted veg with rice, Quinoa or couscous
    Veg stirfry (mangetout, sugar snaps, courgettes, green beans, carrots, peppers, mushrooms) with smoked tofu, or marinated tofu, or cashew nuts
    Cheesey baked potatoes, garlic mushrooms, home made coleslaw
    Veggie sausages, mashed potato, fried savoy cabbage, onion gravy
    Cheese and leek pie, potato wedges, peas and sweetcorn
    Cauliflower cheese, new potatoes, carrots
    Root vegetable crumble with broccoli
    Mushroom/butternut squash/asparagus risotto
    Pitta breads with falafel, hoummous and salad

    Shepherds pie (Beanfeast mix, with added veg, or Quorn mince)

    Roast pumpkin soup with melting cheese and seeded bread
    Stilton soup and multigrain bread
    Thick lentil soup and white bread
    Root vegetable soup and cheese and onion bread

    Pasta
    Penne Pasta with pesto and pine nuts
    Buccati pasta with cherry tomatoes, garlic and olive oil
    Linguine with homemade tomato sauce and parmesan
    Pasta bake with – roast veg and tom sauce
    Mushroom sauce, mushrooms and courgettes
    Cheese sauce, asparagus, peas and artichokes
    Vegetable lasagne and garlic bread
    Spaghetti bolognaise (with Quorn mince)
    Penne pasta with gorgonzola sauce

    Salads
    Halloumi, rocket, cherry toms, spinach and foccacia bread
    Mozzarella, avocado, spinach, tomatoes, basil with ciabatta bread
    Tunisian salad with pitta bread (Delia Smith recipe)
    Kidney beans, lightly cooked green beans, cooked broad beans with a wholegrain mustard dressing
    Boiled egg, new potatoes and cress - Jamie Oliver recipe
    Grilled courgettes and feta cheese with a lemon

    Mexican
    Nachos with guacamole, sour cream and salsa
    Tacos or tortillas with refried beans, salad, cheese, guacamole, sour cream and salsa

    Hi All,

    Need some help, I really want to start putting together monthly or two weekly meal plans for me and OH. We're spending way too much at Mr T and getting way too many takeaways! :oI'd like to start feed OH homemade meals but due to the fact we both live and hour from work the meals need to either be quite or I can make them up at weekends (plus I have a handy slow cooker!). If anyone has a suggested meal plan or budget for us i'd be really grateful. Its for 2 adults (one veggie, one not) and a cat
    (have tried looking for meal plan posts but couldn't find them!:o )

  • veggie curry,
    cauliflower,
    peppers,
    onion,
    mushrooms
    chickpeas (tinned or presoaked)
    sweet potato (par boiled)
    (anything else you have in or like)
    garlic
    chilli powder/fresh chilli
    tsp garam masala
    tsp ground coriander
    tsp tumeric
    (spices are subject to how you like so add/subtract as you want)
    nat yog
    fresh coriander
    sunflower/veg oil

    add oil to hot pan,
    throw in the chopped onion and garlic and spices, stir, add peppers and sweet potato, cook for 5 mins, add rest of veg and stir together.
    add 1 cup of water and allow to simmer for 10 mins, adding more water if needed.

    stir thro nat yog and sprinkkle coriander over to serve.
