Thrifty Apple Drink
Peelings & cores from 4lb apples, 4 pints boiling water, 1 lemon, 12 lumps of sugar.
Put the peelings and cores in a bowl and pour on boiling water. Rub the sugar lumps over the rind of the lemon to extract the flavour, and add these to the liquid. cut the lemon in thin slices and add. Cover and leave overnight. Strain & sweeten. Do not keep.
Rhubarb Drink
3 sticks of rhubarb, 1 lemon, 8oz sugar.
Cut the rhubarb in very small pieces and pounr on one gallon boiling water. Add the lemon cut in small slices and the sugar. Stir until dissolve and leave until cold. This is a very refreshing drink on a hot day. Do not keep.

Solar tea (for the rare sun-filled days)
ON a nice sunny morning, put a teabag, 4 tbsps sugar and a good squirt of lemon juice in a 2 lt transparent plastic bottle (e.g. empty soft drink bottle scrounged from non-mse-minded neighbours!), fill with tap water and leave in the sun from morning to evening, hoping that the sun shines for the rest of the day.
In the evening, put in smaller bottles or jugs and put in the fridge. The next day you have solar iced tea!

Made the rhubarb drink twice - Friday night and this morning. I think the gallon is an American gallon (about 6 pints rather than 8) as the one on Friday was a little watery until I added more rhubarb.
The one today I've altered slightly - I lightly cooked the rhubarb (4 sticks), lemon and sugar then added all to 6 pints of water. I've strained it through muslin as there's lots of bits after cooking. It's a lovely pale pink colour and we're going to have some with baby strawberries in it, topped up with ice!Mink0 -
Hi Mink 35, thanks for trying the rhubarb drink, I never actually got round to making it as I had unexpected visitors and put the rhubarb in a crumble! Thinking about it, yours sounds the more logical and I've just looked at the recipe but its just as I typed.
Think I'll make it your way, sounds much nicer especially with the strawberries!

Decided to cook it slightly because the first one was a little weak, even with extra rhubarb. It did work tho - perhaps they just used huge sticks of rhubarb!Mink0 -
