Now... can anyone help me on rice... when I microwave it the day after, or after defrosting, it goes really dry and hard.... any suggestions???

I'd suggest break up the rice with a fork and sprinkle with water before microwaving. Alternatively, fluff rice up with a fork and fry it in a little oil over a high heat for a few minutes - I often add some fried onions/peppers, any leftover ham and an egg at the stage, and voila! Egg fried rice!

Hi I am new too but just had to post a very quick comment - I know your two year old will be approaching potty training, but if you are expecting again you should really think about using cloth nappies you will save an absolute fortune and they are very reliable and easy to use. I used disposables with first child but now use cloth with number two. Fantastic fantastic. Sorry I know this is the wrong thread but thought it might help. Lots of websites with tons of advice about choosing and using - try kittykins, thenappylady or the babycentre cloth nappies forum.

I just cook double of everything and freeze one soon buids up a good store of HM ready meals plus you have to take into account freezer space the Americans have bigger freezers than we do and I like to keep a bit of space in the freezer for special dealsBlessed are the cracked for they are the ones that let in the light

I cook on a Wednesday morning each week, as my OH goes out for the day.
Yesterday, I did 3 pyrex dishes of chicken biryani, (one for son to pick up on the way home in the evening, for him and DIL to have for supper), a slow cooker full of belly pork, chorizo sausage, cannelini beans and tomato and onion and paprika, two peri-peri chicken breasts and a sausage and potato and onion bake.
I keep the pyrex dishes in the back of the fridge where it is really cold and the rest goes into tupperware, in the back of the fridge or in the freezer.
That's this week taken care of!

Just a quick query....about to embark upon a oamc quest and am looking for uber-cheap recipes which can be made in advance, frozen and re-heated....i have used the search at the top but can't find anything...so sorry if this has been covered already!!0

I just had my cook off the other day.
I made sausage casserole, tuna and pasta bake, bacon leek and cheese sauce pasta, chicken mozzarella, and a chicken chassaeur. (sp) i got 17 portions out of it all and cost me about £15 for all the ingredients. This will last me a month.
i am going to buy some leeks tomorrow to make some leek and potato soup and also i am going to make some tuna fish cakes tomorrow as got lots of it and loads of potatoes left to use up. these will also be frozen, so ive got a months worth of meals out of that lot. :TI am now debt free :j:jsince January 2009

Im moving to Oz in the next couple of months and whilst Im always on a budget here in the UK our budget will be even tighter once we are down under so we need to spend wisely.
When we visited Oz recently, we noticed that grocery prices were higher or on a par with the UK but the choices were very limited, however fresh veg, fish and meat were reasonable if you shopped wisely.
Whilst i like cooking i dont get the time very often to do it, but i know i need to make time and maybe batch cook a couple of times a month. So Im looking for recipes for things i can freeze or even just your staple recipes that you cant live without, that wont break the bank oh and that are fail safe as Im a learner lol
Ive got a slow cooker and just invested in a pie magic / maker.
Any help would be fantastic.

Can you tell me how to make chicken mozzarella and sausage casserole please they both sound very yummy!
