Salmon bones & trimmings.

Hi, as I mentioned on the 'daily' I am now the proud owner of a 'Moby Salmon'
I have filleted it...it was already gutted...and cut the fillets into 3 pieces.
Now, what can I do with the bones/head/tail and trimmings?
I have googled fish stock , but all the recipes I've seen advise against using salmon or oily fish.
So, should I just poach the bones and then pick them clean, but what about the cooking liquor, I'd hate to throw it and it's too much for my cat to drink. :rotfl:
