Starting a food business

Hi there,
I have recently been considering the prospect of starting my own food business.
I consider myself a very capable cook, my idea was to make a range of sauces, marinades and curry pastes to sell. unforunately I have absolutely no idea how to go about this and I would appreciate any help from people who have experience in this area.
In my research I have discovered that farmers markets only allow produce from a certain range to be sold. This would rule out a lot of products as I often use things like chillies, galangal, spices etc that are not native to the north west of England. Does anybody have any idea about the best route to market in this instance?
I also understand there are certain regulations around food production. I beleive it is possible to bend these rules in the case of home production but how far and how would I go about predicting shelf life?
Any other help or advice that comes to mind would be much appreciated from everybody.
