    Ooh no i would make some custard ;) It would make a change having used the eggs whites in something other than meringue. Thats me now, not the dieting me :rotfl:

    An omelette is quite different from scrambled eggs;) and they certainly don't have to have cheese in -although I think they're much nicer if they do :D

    Eggs are really good for you and I was taught at school (many years ago) :rolleyes: that they are a good quality protein. I make spanish omelettes all the time and they are a super way of using up leftover potatoes. I try to copy the ones in tapas bars but cannot seem to get the slices of potato thin enough.

    thanks for all the replies guys - made me want to try soooo many different omlettes :rotfl:In the end I made one with prawns, spices and french beans - a bit of an odd mix I know, but it was yum, and best still OH liked it (always hard finding healthy food we will both enjoy!).

    Eggs are good but Slimming World states they are high in cholestrol so if you have high cholestrol already eat no more than 6 a week - if normal then no more than 10 a week. OH and I usually get through 10 a week between us or so!

    A tip for omlettes. After you've fried any supplementary ingredients, like potatoes, onions, bacon, etc. for spanish omlettes, fritattas, etc. and added the egg mixture, turn the heat down really low, cover the pan and leave it for 10 minutes. Yes, you did read it right: 10 minutes! Turn on the grill towards the end of this time. At 10 minutes, remove the cover, add any topping(s) and finish it off under the grille. The omlette will "fluff up" and will not stick (not even to my trusty old and worn out frying pan). I know it sounds odd, but it works.
    The acquisition of wealth is no longer the driving force in my life. :)
