Cajun Chicken pasata for lunchbox

Has anyone got a nice/easy recipe for this to stop my OH from eating junk food like mcdonalds at lunch time. He is getting very bored with sandwiches and is on the brink of having a large fillet tower meal every day for the next two weeks to make up for eating my boring sandwiches for two weeks !!!l - Help :eek:

    You can make this the night before i usually do it as i am cooking the evening meal

    you need chicken breasts, cajun spice mix, low fat plain yogurt, 2 limes canned sweetcorn and rice/pasta

    marinate the chicken, spice, yogurt and zest of 1 lime for 30 minutes
    grill chicken and cook pasta
    when pasta is cooked add the sweetcorn and the zest of the other lime
    when all ready and cooled pack in lunch boxes

    It is possible to buy in Indian stores a spicy breadcrumb mix (too spicy for me so I use a lot of flour) and you can make chicken filets/nuggets from these - very popular with my friends children(! - not that your OH is a child!) alternatively a little chilli powder if he likes it spicy. You could make a tower like sandwich from this? Otherwise just add some chilli to passata or chopped tomatoes, and finish your chicken off in that if he has a microwave at work
