    Recipe as promised :j

    Sweet Potato stew

    1 onion, chopped
    ½ teaspoon cayenne pepper
    knuckle of freshly grated ginger
    1 tablespoon olive oil
    2 cloves garlic, crushed
    1 teaspoon hot curry paste (or to taste)
    350g sweet potato, peeled and cubed
    225 button mushrooms, halved if large
    300ml passata
    300ml vegetable stock
    250g spinach, washed and roughly shredded
    2 tablespoons chopped fresh coriander
    4 tablespoons peanut butter



    1. Heat oil, then fry onion, pepper, ginger and garlic for 5 minutes, stirring occasionally until beginning to soften
    2. Add the paste and fry, stirring constantly for one minute. Then add the potato and mushrooms, stirring for a minute or so to make sure they get well covered in the spice mixture
    3. Add the passata and stock. Bring to the boil, then cover and simmer for 15- 20 minutes until the mushies and potatoes are tender.
    4. Add the spinach and stir in until just wilted.
    5. Take a couple of spoons of the liquid from the pan and mix with the peanut butter to soften, then add this mixture to the pan with the coriander. Heat until peanut butter is to same temperature as rest.
    6. Serve and enjoy. I like this with rice but it’s better with couscous.

    As I said my meat eating OH loves this as do my carniverous friends!

  • Have friends round for lunch, we are veggies so they have to eat veggie too.

    Starter
    Potato and Garlic Soup with Focaccia Bread (dough made in breadmaker, baked in the oven

    Main
    Jamie Oliver Cherry Tomato Pasta with fresh herbs

    Dessert
    Homemade Lemon Icecream (a la Nigella) with HM raspberry sauce

    All very easy and cost-efficient - yet very tasty

    The whole meal for 4 1/2 people (1/2 being my daughter) including a bottle of red wine costs about £9, or £2.25 per person.

    Not bad for a 3 course meal

    PINE NUT ROAST (from Here's Health magazine 1984 and our christmas dinner ever since)

    1oz butter
    1 onion
    8oz pine nuts
    4TBS milk
    4os white breadcrumbs
    2 eggs
    salt and pepper
    nutmeg

    ***
    Stuffing

    6oz wholemeal breadcrumbs
    4oz butter
    1/2 lemon
    1/y tsp dried marjoram
    1/2 tsp dried thyme
    4 TBS fresh parsley
    salt and pepper.

    ***

    Fry the onion till tender in the butter, add to the other ingredients (beat the egg and grind the nuts roughly first)

    Combine all the stuffing ingredients - easiest to use your hands.

    Layer up in a 2lb loaf tin - 1/2 the main mixture, the stuffing (use your hands to mould to shape) then the rest of the main mixture.

    Cook at 180 for about an hour with the top covered in buttered foil, remove foil for the last 10 mins. (I use a paper loaf case, but you would need to grease the tin and coat with breadcrumbs otherwise.)

    You can get vegetarian gelatine, so you could still make a pannacotta.

    Veggie Lasagne is yummy, I have a home made recipe made with toms, mushrooms, onions, peppers, courgettes and an aubergine that ius pretty good.

    I would also suggest a really nice vegetable pie with two veg, more tradtional and can be served with veggie gravy if you like.

    BTW regarding Quorn, in the frozen food section of supermarkets you can get veggie mince, which is protein like Quorn, but also is made with wheat. IMHO it tastes a whole load better than Quorn and cooks better as it absorbs flavour better. Plus you can brown it in a frying pan thee way you can't with Quorn mince.

    Slice 2 large aubergines. Technically you should fry them in oil but I tend to just lightly brush with oil and cook them in the oven for about 15 mins cos it's healthier.

    Fry up a large onion, add a couple of chopped cloves of garlic. Add 2 tins red kidney beans (drained) and a tin of tomatos, also some mixed herbs. Cook for a few minutes and then roughly mash up.

    Grease an ovenproof dish (big enough for 4 people). put a layer of the aubergines in the bottom, then follow with a layer of the bean mix. Repeat ending with a layer of aubergine.

    Whisk a small tub of plain yoghurt (about 150 mls) with an egg and use this to cover the top. Add 4 heaped teaspoons of parmesan. Cook at about 190-200 deg for about 30 mins.

    Even nicer made the day before....

    Another one for Veggie Moussaka, but use this recipe.. i swear it will convert most meat eaters. absolutely gorgeous. my OH is a rabid carnivore and he loves this.
