Veggie dinner options

I am cooking lunch on Sunday for a few friends, 2 of whom a vergetarian. Of the four guests, 3 eat fish. Has anyone any ideas for a good main course that won't make the vege option look like an after thought. If its a good suggestion, I would think about making the whole meal vegetarian.

    If you haven't eaten Quorn before its quite nice. We cooked a 'chicken' curry with the chicken style pieces and our guests couldn't taste or tell the difference.

    Haven't tried this one myself however!

    I have made a lasagne called mexicana something or other before which is veggie and was lovely for all. Maybe a search on recipezaar might find it. If not I'll see if I can hunt out the recipe - it's been a while. I would def cook one meal for all but that's maybe because I'm a bit lazy!!

    A vegetable lasagne has always gone down well when you have a mix of veggies and non-veggies.

    I'd make the whole meal veggie as you dont want to be faffing about cooking 2 separate dishes do you? there is a HUGE veggie thread on here somewhere, no doubt one of the clever ones will do you a link :D

  • I have done a roasted butternut squash filled with garlic / mushrooms / cream before that has converted even hardened meat eaters....

    You can use any squash, butternut, acorn, gem etc etc 1 squash=2people

    halve a squash and scoop out the seeds, put a little garlic and butter in the holes. roast until soft (30 - 45 mins).
    In a frying pan, fry some sliced mushrooms in olive oil - add parsley (etc), when done swirl in some cream.

    Pour the mushrooms into the garlic butter in the hole and serve

    For me nothing beats a big pot of vegetable curry, I have done it quite a few times with friends round and never had any left on the plates.

    I've got several good recipes including a sweet potato stew that are loved by my meat eating friends and OH.:D

    I'll post some tomorrow for you - recipe file is on my work 'puter since the home one crashed :mad:

    Pine nut roast is very easy and Sunday lunchish, it's not especially cheap, but compares well with any meat you might otherwise have. Can post the recipe if you want it, Ness.

    I use lentils in any recipe that you'd normally use mince for. when adapting your own recipes make sure you're aware of "hidden" meat in things like gelatine, cheese and worcestershire sauce. dd11 is veggie and so that's what we both eat but when we have visitors and I cook meat she has a special wooden spoon, marked with a v for serving herself with first so that veggies do not become contaminated by meaty microbes. btw real vegetarians do not eat fish
