Desperate - beans and rice stage

Hiyah anybody tell me how I can jazz up some rice - I have plain white rice and chicken for tea. I have no money til payday tomorrow. I have some piri piri to jazz up the chicken but it just all seems a bit dry and bland so I was wondering if I could do anything with the rice. I have storecupboard items such as herbs and spices - I don't have any tinned tomatos left and I only have eggs, milk and passata in the fridge. Any ideas?

It all looks a bit desperate when it gets to this stage with money - but I'm not getting one penny into debt again.

Have you got some curry powder, and some flour? Then you could fry a little curry powder in butter or oil, add one or two tbsps of flour and make it into a sauce by adding the milk bit by bit - like a white sauce, but now it will become a creamy curry sauce. Add the cooked chicken, serve with rice.

gently fry a little finely chopped onion & as it start to get clear add the dry rice & fry very gently for a few moments. As the pan starts to dry add some chicken stock if you have it then as the chicken cooks strain off the juices & add that to the stock your cooking the rice in, maybe add a little garlic & some herbs that suit chicken such as sage & a little chilli or pepper (go with what you have/like) if you have any peas & or sweetcorn you could add that too. A squirt of lemon over the cooked rice would be nice too..

    Hi scattymam,

There are lots more ideas on this older thread:

    Anyone got any rice recipes?

I'll add your thread to that one later to keep all the suggestions together.

If you have turmeric or saffron, you could add some to the rice to make it yellow?

You could do egg fried rice?

You could put the rice in ramekins, then 'upend' them on the plate to get a perfect round rice tower (ok, doesn't make it taste any different, but looks fab!)

    Egg(s) + rice = egg fried rice?

PS. You beat me to it fair & square, Trow! The presentation trick is a nice bit of "out of the box" thinking, as well!

This is a lovely recipe I use if I am doing mexican food like burritos or fajitas so I am sure it would work well with piri piri chicken http://www.elise.com/recipes/archives/000040spanish_rice.php
It make the rice lovely and moist
