Tomato Pasta Sauces

  • taste it and see :) I think it's hard to go so badly wrong it's inedible although I have ended up with indigestion once or twice :)

BTW I tend to save wine for stew-y type things since I do think it makes tomato sauce look a bit odd although it normally tastes fine :)
  • The secret here is to leave it cook slowly, rushing things will not help at all.

Yeah, guess I should have thought about that, huh? Do you think now that it's all made, the oxo cube will make much of a difference? Don't want to throw the whole lot away now, but also don't want to be embarrassed by my horrible cooking. If it was just me and bf, I wouldn't mind, but I cook for the two lodgers as well.

Don't you dare throw it away! As I have said on these forums before, I refuse to waste any food, as long as someone else in the world is dying for the lack of it.

Just think of it as a "meatless Bolognese sauce". Don't tell them that, of course, and only mention the red wine.

I am now going to have to add an OXO cube to my next batch as an experiment.
The acquisition of wealth is no longer the driving force in my life. :)

That's a very good way to put it. I'm defo not going to waste it. It's food after all. If they don't like it, they can stick it where the sun don't shine. It's very nice of me to be cooking them dinner anyways. If it's that bad, maybe they'll start cooking for themselves. :rotfl: I'll let you know next week if it's any good.

  • if you do a basic tinned tom/ onion/ garlic/ olive oil/ tom puree pasta sauce, then you can do loads and use it for homemade pizzas, base for a veg chilli or crumble or ratatouille (spelling?). my fave is to put spaghetti with it and add pancetta, black olives and basil mmmmmh!

Did anyone see the Jamie Oliver prog about food last night? He had some tomato sauce he gave someone to try. they said they liked it. It had a massive amount of salt in it balanced with a lot of sugar! These are the levels of salt and sugar in bought sauces.

he gave the man another batch of tomato sauce to taste, made OS, with only a small amount of salt to taste. He liked this one just as much.

When I make a pizza, I simmer a tin of tomatoes until thick and this is what I put on the base. I don't add salt as there is a lot of salt in cheese and bacon - both of which I like on pizza.
