Backdate of pay increase after leaving employment

I was enquiring about getting a backdate of a pay increase from my previous job before Christmas. (see link). http://forums.moneysavingexpert.com/showthread.html?p=6766990#post6766990.
I wrote to the deputy chief exec of the company and gave her four weeks to reply (as I was informed she was on holiday for two) but received nothing. I then wrote to the chief exec two weeks ago and have had no reply.
My original letter content was this:
I am aware that (THE COMPANIES) cost of living increase has been agree at 2.47% and is being backdated to the beginning of this financial year. As you know my contract of employment ended on 31st August 2007.
I assume the above pay increase applies as I was working for (THE COMANY) during the period the pay is being backdated. Can you please confirm whether or not I am entitled to this backdate of pay.
My second letter I enclosed a copy of the original and basically asked, again for a response either way.
I was wondering what the next step should be. The organisation is a charity and has chair people. I can write to the chairman... I assume I need something in writing stating that in their opinion I am not entitled to it so I have something to testify against.

    I am an employment solicitor. However, my views should not be taken to be legal advice. It's difficult to give correct opinion based on the information given by posters.

    Usually if you've left a company before the pay award kicks in, you don't get it.

    I could call them... I would like something in writing.

    If you read the other posts some suggest a case needs to go to the small claims court to set a precedence, like the bank charges.In this case I would assume I need something in writing from them stating they are not willing to pay.
