How To Tell If Your Cakes Cooked

A properly cooked sponge cake should be firm in the middle and have slightley shrunk away from the sides of the tin. It should also spring back when you touch it.

    You can also stick a piece of spaghetti into it and see if it comes out clean (Linda McCartney tip!)

    I always press gently in the middle with my finger. If this leaves a dent then the cake isn't ready! If you can't tell where you pressed because it has sprung back into shape then it is done.
