How To Tell If Your Cakes Cooked

A properly cooked sponge cake should be firm in the middle and have slightley shrunk away from the sides of the tin. It should also spring back when you touch it.

    I always press gently in the middle with my finger. If this leaves a dent then the cake isn't ready! If you can't tell where you pressed because it has sprung back into shape then it is done.
