How can I spice up spinach soup

Hi, i have just made some spinache soup following this recipe
Ingredients: Serves 4
2 shallots thinly sliced
1 medium sized leek thinly sliced
1 medium sized potato diced
500g of fresh baby leaf spinach
2 sprigs of fresh thyme or a heaped teaspoon of dry
2 pints of water
Olive oil
Salt and pepper to taste

Cooking Instructions:

1. Heat a splash of oil on a medium heat in a heavy bottomed pan, add the shallots, leek and potato and soften for five minutes.
2. Add the water, slowly bring to the boil, then simmer gently for about 30 minutes ensuring the soup doesn't come to the boil.
3. Introduce the spinach, raise the heat slightly and stir continuously for four minutes, until all the spinach leaves are dark green and limp.
4. Turn the stove off and leave the soup to stand for fifteen minutes then blend the soup in a food processor until completely smooth.
5. Bring back to the stove and reheat until hot but don't boil.
6. Add salt and pepper to taste.

Unfortunately it dosen't have a lot of flavour. Anybody got any ideas how I can add some flavour to it?

    Just a wild thought, but have you got any nutmeg? If so, try a tiny bit in a couple of spoonsful of the soup, so see if it is any better, or yuk.

    Bogoff Babe beat me to it. I thought of nutmeg too. If you're not a veggie [or if you are perhaps the veggie equivalent] could you fry up some smoked bacon until it's really cripsy and then sprinke it over the top or perhaps some grated parmesan or add a little blue cheese [I guess too much would overpower the spinach]
    I find spinach [obviously not soup!] goes well with a fried egg.

  • have you tried adding a vegetable stock cube to it? I made some creamed sweetcorn soup and added 1 to give it a bit of oomph. Was delish!
  • Add some steak and some chips, mushrooms, tomatoes all with a dash of red peppercorn sauce. :)
  • Thanks, It does taste as though some stock would have been better than just the water. Didn't think of putting one in after but can't see any reason why not. I got quite a lot of soup so can try a few options.
