Using Up Everything in the Freezer by Tomorrow!

DH is going away at the weekend for a month so me and DD(8 months) are going to stay with my parents. I've been running the freezer down because I don't like leaving it on for that long.
Are a few bits left, obviously some will have to go in the bin, would like to use the more costly things up so it's only cheap stuff I am chucking IYSWIM.

So, need to make lunch today for me (DD is having yesterdays leftovers, DH is at work) Tea tonight, breakfast and lunch tomorrow for all 3 of us.
Also, I am veggie, DD and DH eat meat.

This is what is left:

Unopened bag roasted parsnips
Half bags Frozen brocolli/ carrot and swede
Nearly full bag of roasted butternut squash and sweet potato
2 quorn sausages
2 quorn fillets
2 quorn deep fill mince pies
2 organic turkey fillets (taken out to defrost)
2 portions organic pork strips (taken out to defrost)

Any ideas?

Could you wrap up what isn't used in lot of newspaper, and pack them in an insulated bag to take with you? We did this when we went on holiday last summer: after a 5 hour drive, nothing had even begun to defrost? Surely your mum has a little room in her freezer? Failing that, make some vege casserole and soups to take with you and freeze.

With what is already defrosting, I take it that the veg can be defrosted fast. How about making a pork and parsnip casserole, with a squash and potato mash topping?

Now that I have posted, it really seems obvious!

It's just looking at it all is a bit daunting, but seeing it in a list makes it all clearer!

Lunch for me today: quorn pies and veg
    Tonight: turkey/quorn and bns rissotto
    Tomorrow lunch: pork/quorn sausage casserole

I've not noticed any undesired effects, and I eat it daily!

I'm going to try and start eating less of it, because it's realllllly expensive
