Tasty, low-fat, CHEAP recipe

Hi all, I've just started looking at the MSE boards and thought I'd contribute a little something. This is one of my favourite winter recipes - it's really yummy, low-fat and best of all...cheap! I hope you all enjoy it as much as I do.
Spicy Beef Casserole
1kg Stewing Beef
2 tbspns flour
2 tsps each curry powder, ground ginger,cumin,coriander
3 tbsps each brown sugar, worcestershire sauce,vinegar
1/2 cup orange juice
2 each sliced carrots,onions
Cut beef into 3cm cubes and place in a casserole. Combine the flour with the spices and rub into the meat until it is well coated. Add the sugar,sauce and vinegar and marinate for at least 4 hours.Pre-heat the oven to 180deg. Add the orange juice and vegetables to the casserole.cover and cook for 2 hours or until the meat is tender.

Thanks, hand, I'm always looking for a hand to make dinner, but I obviously didn't read this right through before I started
. I hadn't realised that the vinegar and worcestershire were for a 4 hour marinade.
Oh well, it's in the sc now on low for 4hours, for the marinade to work while slowly cooking, then I'll add the vegs and turn it to high for 2hours. Trying-very-trying, I'm sure it'll be fine how you've done it. I just marinade for as long as possible (overnight is absolute best but not always practical). Hope you enjoy it! :beer:

Well thanks, hand! We've just had our dinner, 3out of 4 gave it a big thumbs up. No4 always says she doesn't like my meals, but only 'cos she's at an awkward age and she's trying to make out that she's the better cook. I served it up with mixed herb dumplings, pots, puff pastry and steamed veggies Total cost about £2.00 'cause I got rtc beef. They were so well filled, they couldn't even manage pudding, tho' hubby did say to put the bowl in the fridge and he'll eat it later. :-)Official DFW Nerd Club - Member # 593 - Proud To Be Dealing With My Debts!0
