soup help

just need a bit of help im on a diet at the moment.....
i have a load of veg in the fridge and i dont think it will last much longer so i want to make some kind of soup but dont have a idea of what to put in it lol( i mean veg and water but what else ?)
i have in the fridge
broccili
sprouts
potatoes
cabbage
cauliflour
i think thats it
anyone any ideas ?

I would advise not to use a huge amount of potatoes in home-made soup - it can go very starchy.
How about some herbs (fresh if poss but dried will do), stock (fresh or cubes), tinned tomatoes, tomatoe puree, soup and broth mix (needs pre-soaking), lentils, some dried noodles/vermicelli broken up (bit like you find in minestrone). Not sure how your sprouts would go in soup, who knows they may be fabulous - I'm sure someone will pass comment either way!

ss whats broth mix ?
if i just bung it all in a pot and add some veg cubes or some oxo's do you think it would taste ok on the plus side all them veggies will be good for me and id be aloud loads of it cause im constantly hungry lol i might just put the sprouts on the side lolmy debt free date is finally March 20090 -

thanks for that do you think it would be ok to cook tonight and just warm up tommorrow ??im thinking of putting it in the slow cooker for a couple of hours tonight before i go to bed would that go ok ?

Yup... whatever combination you have decided on should be ok in a slow cooker.... And you can either have it chunky or blend it in the morning0

Soup and broth mix is a pack of dried split yellow peas, split green peas, red lentils and pearl barley. It needs to be soaked for about 8 hours in cold water BEFORE being added to the stock for cooking. You don't use a lot of it - it swells up after being soaked and then the pearl barley swells again after being cooked though the lentils all but disappear into the soup.
It's very good for adding bulk, texture, colour and protein to soups and stews.0 -

Use this formula to make a smooth soup out of any veg;)
chopped flavouring veg -onion (at least one), garlic, leek, celery
cook gently in butter and/or olive oil
+
other flavourings -spices, chopped bacon, fresh ginger, coconut cream (add this with the stock)+
chopped main veg (squash, carrot, leek, mushrooms, parsnip, potato, frozen peas, watercress, spinach, broccoli, cauliflower, lentils, other beans) cook until beginning to soften+
Water/vegetable stock/ chicken stock to cover by an inch or so (too little is better than too much as you can easily thin it later). Bring to the boil then simmer until everything is cooked. Allow to cool and then blend with a stick blender or in a food processor. You may want to thin it with more water/stock. If it is too thin add some more potato and cook till soft -blend again.+
Reheat gently to serve. Add cream/yogurt/ grated cheese if liked
Obviously you don't have to blend the soup, you can leave it chunky. I tend to do this with bean soups. I also add barley or small pasta to this type of soup.
Good combinations are; lentil and spinach,spiced butternut squash and coconut, watercress and potato, leek and potato, curried parsnip, jerusalem artichoke and bacon, carrot and orange, broccoli/cauliflower and cheese, celery and stilton.0 -

I made broccoli soup at the weekend, and it was delicious with crumbled stilton added just before serving.
