I seem to have made enough butter for an Army!

I have been busy making butter with all the reduced double cream I have been buying from Tesco. Trouble is now what shall I do with it all?
I have been making it into blocks and freezing it, I love the buttermilk that comes off of it and have plans for the pint I have got tonight. Buttermilk pancakes for breakfast, and buttermilk scones smothered in my butter lovely!
But what can I make with all my butter?
I was aiming to lose a bit of weight this year as well, fat chance with all this butter! :rotfl:

Sorry if I'm stating the obvious, but I'm not sure what you're after. I'd use it for frying/sauteeing, making white sauce, baking, pastry, spreading on bread and toast, melting over baked spuds -is that the sort of thing you after0

butter can also be used to preserve herbs (etc) in the form of herb butters...
eg a garlic and parsley butter can be made, then frozen in a 'sausage' for cutting at a later date.
chilli ginger and lime butter is rather fab with salmon etc..
does this help?0 -
Thanks both,
Just some basic idea's was what I wanted to get me going!
The flavored butters sound great, I have some mince in the fridge I will turn it into lasagne and make a white sauce.0 -

Butter will last for ages in the freezer - why don't you keep it for a weekend treat on toast/scones/whatever? That way having it will save you money because you won't buy any butter for months, and you won't destroy your diet plans.0
