what to do with this lot?

Well, we are moving house on the 25th - and so I thought I had better run all the cupboards down as much as posisble before we go. So I made a list -

tins -

1 x campbells condensed mushroom soup
1 x baked beans
1 x custard
6 x chopped tomatoes
1 x carnation caramel (banoffee pie filling)
1 x butter beans
1 x chick peas
1 x sweet corn (large)
1 x refried beans
1 x satay sauce
4 x tuna
1 x roasted and salted cashew nuts

Packets-

Plain flour
SR flour
corn flour
pasta '00' flour
brown rice
long grain rice
arborio rice
red lentils
raisins
1 x portion egg noodles
pine nuts
walnuts
ground almonds
1 x raspberry jam
1 x lemon sauce stirfry
1 x fajita seasoning

Freezer -

1 x lamb mince
2 x duck breasts
1 x garlic bread
2 x frozen peas (bags of)
2 salmon fillets
4x rashers bacon
1 x home made lasagne for one
1 x packet gnocci pasta
1 x pastry chicken lattice
1 x mince (beef)
2 x freezer surprise portions (either chilli or spag bol)
1 x pack of mini chicken fillets
1 x pack of wraps
1 x home made chicken korma

So there are two of us and I want to use up as much as posisble and not spend a fortune in doing so. The only thing we don't eat is cauliflower and mushrooms (exception being the soup in a caserole)

So far Fajitas jump out at me, and the HM lasagne and curry can be eaten on days the my OH is at training, and the tuna can be used in baked potatoes - but as for the rest I am stuck. Please can I have your thoughts??????

  • hmmm how about some sort of satay stir fry with the duck breasts, peanuts, egg noodles, and a bit of veg thrown in?

    you could make a lovely pasta sauce witha couple of tins of tomatoes and the bacon. cook down onion and garlic in some oil, add the bacon til almost cooked then add the tin of tomatoes, some herbs, red wine vinegar to taste and a pinch of sugar cook simmering for about 15 mins and serve with the gnocchi. Chcuk in a handful of red lentils with the tomatoes to bulk it out a little.

    How about using the chicken fillets with the satay or lemon sauce sauce, and serving over rice? Also, you could make a risotto with the salmon and the peas, and maybe some broccoli or other fresh greens, serve with a sprinkle of pinenuts rather than cheese. You could also make a shepherd's pie with the lamb and the lentils & tomatoes, and a soup with the butter beans and tomatoes. HTH!

    Make a bean stew using the baked beans, chickpeas and butter beans, you can also add the lentils and some mince if you dont want it to be a veggy feast. Use a few herbs, some stock and some tinned toms and should be lovely. You could make yorkies or something to liven it up using up some of the flour.

    Also a salmon stir fry with noodles, pine nuts and cashews (rinse the salt off first though)

    Condensed soup is great with pasta so maybe use the gnocchi with this, if theres any leftover then use for lunches.

    You can also make walnut bread with the flour and walnuts. You can use ground almonds for making almond shortbread which will use up the flour nicely too.

    Enchilalades with the chicken fillets, bacon and wraps. Just fry off the chicken and bacon with some onion and fajita seasoning rollinto wraps, tip a tin of toms over it and cover in grated cheese. Allow 2 per person with some salad leaves.
