Hi, thankyou, what I don't understand then is if they have enough facts to tell me the exact amount of the pot, why haven't they sorted it?

Because they have to carry out due their due diligence checks, in case anyone else is eligible to claim some or all of the funds.

What is not clear is the reason for the 8 year delay, and why none of this was dealt with in a much more timely manner post death.
You say only you and your present husband attended the funeral so that begs the question who actually wound up your ex husband's financial affairs at the time, and how this matter seemingly slip though the net.
Possibly his affairs quite simply haven't been wound up by anyone (OP, if you're interested, see to check if probate has been granted - always assuming he had an estate which needed probate) and nobody advised SW because there was nobody who knew about this policy, so didn't realise his death needed to be reported to them.
That is not unexpected. At this time, the policy is not in your name. It will still be in your ex-husband's name.
…and as you've remarried, that would definitely be an issue.
Googling on your question might have been both quicker and easier, if you're only after simple facts rather than opinions!2 -
It does say on the letter " as it is now 2 years since we were notified of the death " and then goes on to explain about tax etc, and compensation to cover tax that you may incur. Thankyou

Maybe he had not nominated anybody as a beneficiary on the Expression of Wish form? Pension companies do remind people regularly to do this, but some just do not do it.
Maybe they have been unsuccessfully trying to trace living relatives for a long time, and have now come to you.
Just guessing though.
