Brown chicken/turkey meat. WHY/HOW?

Evening everyone,

I invested in a slow cooker a few months ago and rarely used it but have started over the holidays to really use it for other things apart from stews!

Tonight i cooked a turkey leg from tesco (99p!!!) and it was delicious! Lots of meat and it just fell off the bone (it was all brown though).

My question is.... why is some turkey/chicken meat brown? I am very squemish so don't want to know if its something horrible. Does that make sense? Hehe.

    I buy diced turkey thigh for casseroles - that is brown meat and it's delicious! I use it as a substitute for any recipe that calls for chicken - much cheaper!

    The breast is white meat the rest is brown, the brown meat is the most tasty, once you have made it into a curry or something with a sauce or gravy you won't know what colour it is it will just taste delicious

    You must get over your phobia - 99p for a turkey leg is a bargain!

  • Just to be nosy - how did you cook it in your slow cooker? On its own or with veg etc? and what kind of liquid?

    Also does it taste 'fatty' in any way? i usually only eat breast meat as i have a thing about meat tasting fatty/greasy but we need to use cheaper cuts as OH wont consider a meal without meat :rolleyes:

    I've never been keen on the 'brown' meat from chicken either, but breast meat is flamin' expensive!
  • Brown meat on birds is brown because that muscle is designed to work differently- breast muscle has to sustain long effort but, I guess turkey legs don't need to work so hard-can't remember the details from undergraduate level (seemed soo irrelevent then!).

    All is good meat and fine to eat. THe reason legs are cheap is exactly the reason you "have doubts" if just isn't as pretty on the plate and so less in demand.
