is it acceptable now to only keep digital records of receipts, tax returns etc.
or do you have to keep the paper versions?

Paper based records no longer mandatory as long as pdf versions are retained and accessible for the requisite periods - guidance below
As it happens I went totally paperless 10 years ago, and all financial records as well the tax return itself are in pdf format. I don't even own a printer anymore.

We have kept digital only for everything in my wife’s limited company for the last 8 years.
