Why not use your slow cooker to make fridge bottom soup / stew with all those vegetables?
All you do is prepare your veg [ it does not matter what they are, except maybe lettuce would be lost], put them in your slow cooker, add tin of tomatoes [and tin of red beans or chickpeas if you have them] and leave on low for the day.
Eat as stew or blitz if you don't like country style chunky soup
Absolutley no fat, unless you put it in.
Add salt etc to taste on your plate, not in the cooker or it may make the beans hardGardener’s pest is chef’s escargot0
