New Wok

I am looking to buy a new 30cm non stick carbon steel wok as my current Ken Hom one is starting to fall apart. The coating is peeling off and it is wobbly on the hob. It has lasted me a long time. Can anyone recommend a suitable replacement? Mr Hom's woks seem to have mixed reviwes. I want something good quality. My hob is electric plate as there is no gas in my street. Thanks.

    My wife is a very keen cook and often needs 2 woks, and early last year, her second one (also a Ken Hom) gave up the ghost.

    She did a LOT of research, and eventually settled on this one.

    It's been excellent. It's carbon steel, pre-seasoned, and the non-stick has remained. You just need to avoid scrubbing it or using strong detergents as detailed in the instruction manual.

    The important thing in our case is that being carbon steel, it's also compatible with induction hobs. She loves the included spatula too and now uses it almost exclusively. 🙂

    That looks a decent product although I'm surprised that any non-stick product comes with a metal utensil, is non-stick now so resilient that this is OK? Been a while since I bought anything non-stick.

    My pretend wok is rubbish, it attempts to be more wok than saute pan so the flat area is rather small so it doesn't get hot enough other than in the centre when used on induction. The pan above looks of far more sensible proportions.

    Once visited a Gerrard St restaurant kitchen during service - 4 gas burner wok station being driven by 2 cooks, woks the size of dustbin lids, gas controlled by a lever worked with the knees. Scary hot, they were turning out dishes every 60-90 seconds.

    Yes, it's pre-seasoned rather than a chemical non-stick coating, so it replaces itself as you use it, the spatula is quite polished so it doesn't harm the surface, but i'd still avoid sharp metal objects etc.
