Making the most of the cheap Easter veg

This Easter the supermarkets are again offering very low prices on vegetables (down to 8p in some cases). As ever, MSE's deals team has everything you need to know:

Here on the Forum we've had some great Christmas threads about how to make the most of these deals, such as:

For example, @p00hsticks wrote:

I buy swede, carrot and parsnips … cube it all up and freeze it to make stew packs for the slow cooker - I leave a pack to defrost in the slow cooker over night before adding meat, onions and casserole mix / stock cube in the morning when I put the cooker on.

And @RAS said:

If you are batch cooking the veg for soup, save space in the freezer and give yourself more options by cooking and mashing or briefly blending the veg rather than cooking in lots of liquid. More compact and you can use the mix for rissoles and fried "cakes", pie topping, side dishes  as well as adding stock to make soup.

Forumites have also told us how they use Primark paper bags to keep potatoes fresh.

Whilst some suggestions work year-round, it would be great to hear some ideas with more of a spring / summer feel, so please let us know what you'll be doing with your bargain veg.

(For the first time in my life I actually have a freezer big enough to think about joining in, so I'm definitely keen to gather inspiration here!)

mash frozen in sheets the size of my usual cottage pie dish, ready to top it.

roast potaotes and wadges made and frozen

grated carot to add to dishes.
