Prepared notes in an Interview

If they ask a question like "what do you know about us?" Then having notes is not a problem, surely they don't expect you to remember by heart every company you interview for.
I disagree and I don't think it's unreasonable to expect someone to remember details about a company they are interviewing to work for. Unless you are doing 5 interviews a day, I don't really see the problem in remembering.
The question "what do you know about us" usually doesn't need much more than a surface level "You're the leading manufacturer of plant based drinks in the UK and offer contract packaged products to supermarkets and also sell an own range of branded products". This is usually sufficient unless you're applying for a strategy related position. If you really needed, you could refresh your memory just before the interview with a quick google search.
I'd personally find it a red flag if I asked a candidate a relatively simple question and they couldn't answer it without reading notes.
Different to the OP's scenario though where they're talking about notes for a STAR scenario.
