There's something simmering away in our kitchen, something with bold, confident flavours and fragrant spices – the kind you might recognise from dishes served a little further east. It’s one of our favourite cuisines, and one that travels far beyond its borders: a food culture where street stalls sit alongside centuries of tradition, and where ingredients are layered, aromatic, and unmistakable. 

Now, we could of course just tell you what dishes we’re releasing, but where’s the fun in that? We want to see if you’ve been paying attention! 

So, your challenge is to guess the three dishes we’re getting ready to share. Get a close enough guess, and you could be enjoying them at home. We’ll also include a £50 Charlie Bigham’s voucher, so you can stock up on a few of your favourites too. 

Simple enough, right? Great!

Dish 1: The sauce you know today didn’t always look that way, but chefs travelled West and had to substitute black vinegar for other ingredients.

They began using ketchup to recreate the flavour and suit Western tastes, which is how the famous red sauce was born.

Dish 2: Believe it or not, this curry was once served on royal tables. In the courts of Siam, imported spices like cardamom and cinnamon made it a dish for nobility; rich, layered and often referred to as the “curry of kings”.

Dish 3: This dish leans on Korean fermented chilli paste that’s become a favourite with chefs everywhere. Traditionally aged for years in clay pots, it’s savoury, gently sweet and properly spicy.
