what to do with shortbread

We got a lovely Walkers hamper for Christmas. I say lovely - it looked gorgeous, full of scrummy shortbread etc, but I am constantly doing WW so shortbread out for me, also my MIL brought 2 packs of Morrisons shortbread with her on Christmas Day (no idea why, but there you go).
So we have about 8 packets of shortbread in the cupboard. I have given it away to as many people as I can over the hols as we have gone to drinks dos etc and we are still left with 8 or so. PLus some other fancy packs of Belgian chocolate biscuits, oatcakes, fruitcake etc. Its a nightmare. I have tried giving it to the kids (see my fussy eater thread) but they won't eat it :mad: Hubby also trying to lose weight.
Yes I know it isn't any less fattening if I turn it into something else but it might be less boring and maybe freezable.
Come on you lot, I know you can help!
(Actually can you just freeze shortbread ???)An while we're at it, what the h*ll am I going to do with the massive tin of Heroes that is left and the big box of Heroes and the big box of Celebrations ???? :mad: :mad: :mad:

cheesecake base, because I LOVE cheesecake
you could make a very thin based with it then a healthier filling :A I'm trying to be good honestly, I just can't get cheesecake out of my head today.

you can probably freeze it or use it as a crumble topping or base for caramel shortcake if you blitz it first but this is very calorific(sp) What about donating it to a nursing home, hospice, or some one who works with homeless or a refuge etc you could do this with the chocolate as well or give it to the staff at the kids school for easter. We have put all our leftover chocolate in the loft until easter so no easter eggs here as they will have to be eaten next christmas. My kids only like a little bit of chocolate now and again, the advent calender is still full!!!!0

Now I know why I have problems losing weight... usually January is a nightmare diet wise as l always feel I should finish up the goodies first! And children who don't love chocolate??? That'll save them from several extra lbs over the years!
I love the sound of the cheesecake base! I used to freeze surplus uncooked shortbread mix, so don't see why it wouldn't work. If you've no-one else to give it to, then what have you got to lose? I could send you my address of course!!!!Resolution:

yes shortbread will freeze, not sure about chocolate covered though, does it not have a long sell by date though, mine is july, oatcakes and fruitcake will freeze too, we live not far from the Walkers factory0

I would look at sell by dates, check whose birthday is coming up soon and pass it on as a little side pressie. Advantages: no calorie intake, less money spent on pressies Disadvantages: you don't get to make the lovely treats the OP have suggested!0

This is probably not going to be helpful to you at all because of the calories involved but I always have lots of leftover shortbread at this time of year and I use it as the base for a trifle, soaked in Drambuie with brambles from freezer, custard & cream. It doesn't go too soggy and there's a bit more texture in the trifle than when you use a sponge.0
