Gammon

Good evening :)

I bought two large gammon joints and put them striaght in the freezer. I am thinking of doing something with one on sunday but not sure how I cook one I have never bought gammon before :o Or is there something i could do with it thats a little different

    Hi sammiboo,

    I put the gammon joint in a large pot, cover with cold water bring to the boil and discard the water. This helps to remove any saltiness.

    Refill the pan with cold water, add bay leaf, carrots, onions and black peppercorns and allow the gammon to simmer for 3/4 of the cooking time stated on the packaging.

    Remove the gammon from the pan (reserve the water for stock to make soup). Let it cool for a short while then remove the skin. Once removed score the fat on top in a diamond pattern. Spread the fat with English mustard, and cover with brown sugar. Stud the diamond shape with cloves and cook for the remaining time in a hot oven. Let the gammon rest for at least 20 minutes before carving.

    We cooked a gammon for christmas eve, it was the first time cooking gammon for me:rolleyes:

    It really was very nice and gorgeously sweet and moist :drool:

    I am sure however you decide to cook it, it will be wonderful:D
