What is the earliest date they allow me to pay my 25-26 voluntary ni contribution?

You could have set up a direct debit with them to pay it in monthly or quarterly installments starting in May 2025, but it may be too far into the year to get that in place for the current year now.

I'm not sure if there is an earliest date that you're allowed to make a one-off payment for the whole year.0
