Simplifying Food: simple no fuss meals

I use 250g of mince, a decent handful of red lentils (which add protein and also thicken it), onion, garlic, diced carrots, stock cubes, water and some tomato puree. If interested, I'll post the quantities.
I do this in the slow cooker but can be done on the hob. I freeze in meal sized portions.
I also batch cook swede and carrot mash in portions for a side with a roast dinner or a topping for the mince in a cottage pie.
Mince is also good on its own with some new potatoes and greens.

Large handful (3 heaped tbsp?) red lentils
3 carrots diced
200g mushrooms
5 Oxo /beef stock cubes
800ml water
5 tbsp tomato puree salt and pepper to taste
I just throw it all in the slow cooker but you can brown the mince and onions first if you want to. I often add the soft inside part of of broccoli stalks (diced) too as I like my veg and don't want to waste it . Some people add peas but they lose their colour so better added at last minute. You don't need to soak the lentils, just rinse them in a sieve under the tap before adding.
